Ingredients
- 2 lbs. peeled baby carrots (buy these prepared at the market)
- 3 cloves garlic, mashed plus 8 cloves, unpeeled
- 3 T. olive oil
- Salt and pepper to taste
- 1/4 c. maple syrup
Directions
- Preheat oven to 450 degrees
- On a rimmed baking sheet, toss together all ingredients, except the syrup
- Roast for 30 minutes or until lightly browned and fork tender, stirring several times
- Transfer carrots to a serving bowl and stir in the syrup
