Roasted Carrots with Maple Syrup

Ingredients

  • 2 lbs. peeled baby carrots (buy these prepared at the market)
  • 3 cloves garlic, mashed plus 8 cloves, unpeeled
  • 3 T. olive oil
  • Salt and pepper to taste
  • 1/4 c. maple syrup

Directions

  • Preheat oven to 450 degrees
  • On a rimmed baking sheet, toss together all ingredients, except the syrup
  • Roast for 30 minutes or until lightly browned and fork tender, stirring several times
  • Transfer carrots to a serving bowl and stir in the syrup
