Meat Free Menus For Fridays during Lent!
Creating meals without meat during Lent can be a challenge, especially if your children won’t eat fish and you’d prefer not to serve pizza yet again! This was the boat I found myself in last Friday when my parents were joining my family for dinner! I solved my dilemma by making the following recipes: a first course of Tuscan Bread Soup, and then a choice of pasta – Rigatoni with Portobello Mushrooms and Gorgonzola Cream or Cheesy Ravioli Bake (see Lenten Recipes)! Everyone around my table thoroughly enjoyed all three recipes and I hope that they offer you a bit of inspiration for next Friday!
P.S. And, things could be worse – until 1966, every Friday was meat free! With that change, the U.S. fish industry was sure that limiting the ban on meat to Lenten Fridays would be their ruin. As luck would have it, the exact opposite occurred. Since fish was no longer seen as a “penitential” food, it gained popularity! That, combined with an increased awareness of fish as a part of a healthy diet and the air transport of fresh fish, gave the industry a windfall!

The Tuscan Bread soup sounds great. I make a lot of meat-free meals using a meat substitute like Harvest Burgers. They’re really good, but I’ve been doing it for years, so we’re very used to them.
