Kahlua Pork

Ingredients:

  • 4-5 lbs. pork butt (I buy this meat at Sam’s Club)
  • 1 T. liquid smoke
  • 2 ½ T. kosher salt
  • Fresh or canned pineapple

Directions:

  • Place the pork on a long length of heavy duty aluminum foil.
  • Pour liquid smoke and salt over the meat.
  • Wrap VERY tightly in foil.
  • Rewrap the pork a second time, turning the meat in the opposite direction.
  • For good measure, I wrap the pork three or four more times, to prevent the juices from leaking out!
  • Place on a cooking sheet and roast at 325 degrees for 1 hour/pound.
  • When done, place the pork into a large dish to catch the juices that are released as you open the foil.
  • Pull the pork into bite sized pieces and remove the bone.
  • Serve with the recommended rolls, grilled pineapple slices and additional kosher salt on the side.
