Kahlua Pork
Ingredients:
- 4-5 lbs. pork butt (I buy this meat at Sam’s Club)
- 1 T. liquid smoke
- 2 ½ T. kosher salt
- Fresh or canned pineapple
Directions:
- Place the pork on a long length of heavy duty aluminum foil.
- Pour liquid smoke and salt over the meat.
- Wrap VERY tightly in foil.
- Rewrap the pork a second time, turning the meat in the opposite direction.
- For good measure, I wrap the pork three or four more times, to prevent the juices from leaking out!
- Place on a cooking sheet and roast at 325 degrees for 1 hour/pound.
- When done, place the pork into a large dish to catch the juices that are released as you open the foil.
- Pull the pork into bite sized pieces and remove the bone.
- Serve with the recommended rolls, grilled pineapple slices and additional kosher salt on the side.
