During the crazy weeks before Christmas, I was stumbling around Target for the fourth time in the same week! While shopping, I realized I had nothing planned for dinner and had no time to stop at the market.
Was it possible to make a tasty meal from food on the shelves at Target? The answer was YES! Here’s what I purchased:
- A bag of individually frozen, deboned chicken tenderloins by Market Pantry
- A pasta mix from Archer Farms. Choose from many great flavors like ”Mushroom Cavatappi” or “Creamy Tomato Penne.” These mixes each contain a pound of pasta and great seasonings. The mixes call for milk and butter, which I did have at home, but you can also purchase these ingredients at Target in the refrigerated foods section.
Simply grill or saute the chicken and serve over a bed of the prepared pasta. Looked and tasted great!

My emergency dinner is Chicken Divan — Layer cooked chicken and steamed broccoli in baking dish. Mix Campbell’s Cream of mushroom soup, a tablespoon or two of mayo and some lemon or plain yogurt. Sprinkle the top with parmesan and/or cheddar cheese. Bake for 50 minutes or until golden. YUM!
Here’s a very easy recipe, Penne with Grape Tomatoes and Mozzarella. Enjoy!
