I made this dinner using ham leftovers last year! This is a sure family pleaser!
Ingredients
- 5 lbs. red potatoes, quartered
- 1 (16 oz.) container sour cream
- 1/2 c. butter
- 1 can (10.75 oz.) condensed cream of chicken soup
- 2 c. shredded cheddar cheese
- 1/4 c. chopped green onion
- 2 c. cooked, chopped ham
- Salt and pepper to taste
- 1 1/2 c. parmesan cheese flavored bread crumbs
- 1/4 c. melted butter
Directions
- Preheat oven to 350 degrees. Lightly grease a 11″ x 13″ baking dish.
- Place potatoes in a large pot of water and bring to a boil.
- Boil until potatoes are tender, about 12 minutes.
- Drain and transfer to bowl.
- Mix sour cream, butter, cream of chicken soup, cheddar cheese, green onions, ham, and salt and pepper with the potatoes. Spread in prepared dish. Sprinkle with bread crumbs and drizzle with melted butter.
- Bake 30 minutes in preheated oven.
