Green Bean Casserole with Goat Cheese and Roasted Peppers
Serves 12
Ingredients
- 2 lbs. fresh green beans, trimmed
- 1 red pepper, sliced
- 1 large sweet onion, sliced
- 6 oz. mushrooms, sliced
- 3 oz. goat cheese, softened
- 3 oz. cream cheese, softened
- bread crumbs
- olive oil
- balsamic vinegar
- brown sugar
Directions
- Cook green beans in boiling water for about 3 minutes. Drain and place in a 13 x 9 casserole dish.
- Add red pepper and mushrooms to the dish. Toss vegetables with olive oil and balsamic vinegar.
- Roast at 375 degrees for 15 minutes.
- In a separate pan, sauté onions in olive oil and brown sugar just until tender. Toss cooked onions with bread crumbs to coat.
- Add cheese to cooked vegetables until blended. Top with onions and bake in a 400 degree oven 5 to 8 minutes until heated through.
