Green Bean Casserole with Goat Cheese and Roasted Peppers

Serves 12

Ingredients

  • 2 lbs. fresh green beans, trimmed
  • 1 red pepper, sliced
  • 1 large sweet onion, sliced
  • 6 oz. mushrooms, sliced
  • 3 oz. goat cheese, softened
  • 3 oz. cream cheese, softened
  • bread crumbs
  • olive oil
  • balsamic vinegar
  • brown sugar

Directions

  • Cook green beans in boiling water for about 3 minutes.  Drain and place in a 13 x 9 casserole dish.
  • Add red pepper and mushrooms to the dish.  Toss vegetables with olive oil and balsamic vinegar.
  • Roast at 375 degrees for 15 minutes.
  • In a separate pan, sauté onions in olive oil and brown sugar just until tender.  Toss cooked onions with bread crumbs to coat.
  • Add cheese to cooked vegetables until blended.  Top with onions and bake in a 400 degree oven 5 to 8 minutes until heated through.
