Tip of the Week:  Easy Summer Entertaining!

Earlier this summer, several neighbors and I hosted a going away party for dear friends who were moving from our small town in New Jersey to California.  The guest list was long and we wanted to keep the menu simple, room temperature and easy to make ahead!  I thought that what we came up with was worth sharing, given its ease of preparation and great, fresh flavors!

Sandwiches

All of these sandwiches were prepared in advance on long baguettes, sliced and wrapped in foil until serving!  The selections also allow for vegetarian options!

  • Tangy Roast Beef - roast beef with red leaf lettuce spread with mayonnaise that’s been blended with horseradish to taste.
  • Gourmet Turkey - sliced turkey with red leaf lettuce spread with Boursin cheese.
  • Fresh Tomato/Mozzarella - sliced tomato, fresh mozzarella cheese, fresh basil, olive oil, salt and pepper.   (Bel Gioioso is my favorite brand of fresh mozzarella!)
  • Goat Cheese with Olive Vinaigrette - goat cheese sandwiches with black olive vinaigrette. (See Delicious Goat Cheese Sandwich Recipe)

    This party sounds very easy to handle and I might just try this menu. Another way I find it easy to coordinate my big parties is to have a potluck and use the forms on http://www.signupgenius.com/potluck I never have to worry about meals being duplicated, and my guest can still adhere to my party theme, but it saves me time and money.
