Corn Relish 

Ingredients:

  1. 1 c. fresh corn kernels
  2. 1/4 c. finely diced red bell pepper
  3. 2 T. finely diced red onion
  4. 2 T. finely diced celery
  5. 1/4 c. vinegar
  6. 1 1/2 tsp. sugar
  7. Salt and pepper

Directions:

  1. Bring a small sauce pan of water to a boil.  Add the corn kernels and cook for 2 minutes.
  2. Drain and cool kernels under running warer.  Pat kernels dry.
  3. Transfer corn to a bowl and add bell pepper, red onion and celery.
  4. In the same sauce pan, heat the cider vinegar with the sugar and a generous pinch of salt and pepper, just until the sugar dissolves.
  5. Pour the vinegar over the vegetables and refrigerate until chilled.

Makes 4 servings of sandwich topping.
