Corn Relish
Ingredients:
- 1 c. fresh corn kernels
- 1/4 c. finely diced red bell pepper
- 2 T. finely diced red onion
- 2 T. finely diced celery
- 1/4 c. vinegar
- 1 1/2 tsp. sugar
- Salt and pepper
Directions:
- Bring a small sauce pan of water to a boil. Add the corn kernels and cook for 2 minutes.
- Drain and cool kernels under running warer. Pat kernels dry.
- Transfer corn to a bowl and add bell pepper, red onion and celery.
- In the same sauce pan, heat the cider vinegar with the sugar and a generous pinch of salt and pepper, just until the sugar dissolves.
- Pour the vinegar over the vegetables and refrigerate until chilled.
Makes 4 servings of sandwich topping.
