Here’s a very quick and easy chicken fajita recipe. Serves 4.
Ingredients:
- 4 boneless chicken breasts sliced in thin strips
- 1/2 c. lemon juice
- 4 T. olive oil plus 2 T. oil for cooking
- 1 T. wine vinegar
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1 tsp. garlic powder
- 1 tsp. cumin
- 2 tsp. chili powder
- 1/2 tsp. cayenne pepper
- 1 green pepper sliced in thin strips
- 1 red pepper sliced in thin strips
- 1 onion, sliced in thin strips
Directions: In a bowl, miix lemon juice, oil, vinegar, salt, pepper, garlic powder, cumin, chili powder, and cayenne pepper. Stir until combined. (Reserve 2 T. of marinade for later.) Add chicken strips, green and red peppers, and onion and coat evenly with marinade. Marinate for at least 1 hour.
In a hot large skillet, saute the onions and peppers in 2 T. oil for a few minutes. Add the chicken and the extra 2T. marinade and cook until the juices run clear, about 15 minutes. Stir fajitas often so that they do not stick to the pan and burn.
Serve fajitas with flour tortillas that have been wrapped in foil and warmed in the oven, and if you choose, sour cream, salsa, and guacamole.
Alternatively, chicken breasts can be marinated and then grilled separately and sliced.
